Quick and Zesty Tomato Salsa

Freshen up mealtimes with this quick salsa, spiked with zesty lime and spicy jalapeno!

Ingredients
  

  • 4 whole tomatoes, skin on, halved
  • 1/2 medium red onion, finely diced
  • 2 tbsp pickled jalapeno slices, finely chopped
  • 2 tbsp lime juice (fresh or bottled)
  • 2 tbsp chopped fresh coriander
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Prep all your ingredients and toss everything but the salt and pepper into a food processor.
  • Pulse, not completely blend, the mixture until your desire consistency.
  • Season with salt and pepper.
