Hey! Welcome to Gluten Free Gateway. I’m Emily, I’m 23 years old, and I’m from Glasgow in Scotland. I am not gluten-free myself, but I was inspired to explore and experiment with gluten-free cooking by my fiancé, Michael, who was diagnosed with coeliac disease in 2014, and has followed a strict gluten-free diet since.
Recently, Michael and I have both been working towards eating fully vegan. For now, we are both 100% vegetarian, but eat totally vegan at home.
When I met Michael in 2016, I knew very little about coeliac disease. I had a friend at university who had been recently diagnosed, but I still didn’t fully understand it. “No pizza? No bread? No soy sauce!?”
I grew up in a household with parents who adored cooking. Family events usually catered to vegetarian, carnivorous, diabetic, and wheat-intolerant dinner guests. I always admired my mum’s creativity in the kitchen.
Food was one of the main things that Michael and I bonded over when we first started dating. The more I learned about coeliac disease, the more I discovered how prevalent gluten is yet how unenlightened most people are – like I once was! I realised how stressful this could be when trying to find something to eat, and how daunting it might be for someone who has just begun to eliminate gluten from their diet.
Which is why I’ve created this blog! This site is a gateway to a world of safe and exciting gluten-free eating. I want to dispel the belief that gluten-free equals restriction. You don’t have to solely shop in the ‘free from’ aisle in the supermarket. You don’t have to exclude whole cuisines. You can enjoy everything you normally have by being innovative. And most importantly, you can have a balanced diet with all the essential nutrients your body needs, which is crucial for boosting your immune system.
I have some non-vegan recipes from when I started the blog, but every recipe from now on is meat-free, dairy-free and egg-free to cater to other dietary requirements you may have in addition to coeliac disease or gluten intolerance. Just because you can’t eat gluten, doesn’t mean you shouldn’t be able to enjoy to eat vegetarian or vegan if it’s what you really want. I’ve tried hard to devise and develop alternatives for things we originally ate and I don’t miss a thing!
To help you, I have a resource section outlining different gluten-free ingredients and replacements, tutorials for cooking various gluten-free grains, and a comprehensive gluten-free flour overview. Plus, I have a ton of recipes to inspire you to get cooking!
I would like to state here that I am by no means a medical or nutritional expert – my recipes are based around personal research I have done into gluten-free cooking and healthy eating. I use MyFitnessPal for the nutritional information in my recipes. Please consult your doctor before embarking on a gluten-free diet.
